Sea moss lemonade

The short answer

Shake one serving of sea moss gel with lemon juice and a little water in a jar until it disappears, then top with cold water and ice. Shaking with the acid first is what keeps it from sitting at the bottom in clumps.

Lemonade is the recipe for people who do not want a thick drink. Done properly it is a normal glass of lemonade with a little more body — no blender, no fruit, no smoothie.

Ingredients

  • 1 serving Gold Pure sea moss gel, per the label
  • Juice of 1 lemon, about 3 tablespoons
  • 1 tablespoon honey, maple syrup or agave
  • 1 1/2 cups cold water
  • Ice
  • A pinch of salt
  • Mint, if you have it

Lime instead of lemon works and is closer to the jar's own flavor. Sparkling water instead of still makes it a soda — add it at the end and stir gently rather than shaking.

Method

  1. Put the sea moss gel, the lemon juice, the sweetener, the salt and about a quarter cup of the water into a jar with a lid.
  2. Seal it and shake hard for fifteen seconds. Look at it: the gel should be gone and the liquid should be cloudy and even. If you can still see lumps, shake again.
  3. Add the rest of the cold water and shake once more, briefly.
  4. Pour over ice, add mint, and drink it cold.

Ingredients

  • 4 servings Gold Pure sea moss gel, per the label
  • Juice of 4 lemons, about 3/4 cup
  • 1/4 cup honey, maple syrup or agave
  • 1/2 cup warm water, not hot
  • 1/2 teaspoon salt
  • 5 cups cold water, added glass by glass

Half lemon, half lime is the version most people prefer once they have tried both.

Method

  1. Shake the gel, lemon juice, sweetener, salt and the half cup of warm water in a sealed jar until completely smooth. Warm water helps here; hot water thins the gel out entirely.
  2. That jar is your concentrate. Put it in the fridge.
  3. For each glass, pour a quarter of the concentrate over ice and top with cold water.
  4. Use it up while it is at its best, and keep it in the fridge the whole time.

Why shaking matters

The difference between good sea moss lemonade and a glass with lumps at the bottom is one step.

Sea moss gel is a set gel, and set gels do not dissolve into cold water by stirring. Dropped into a full glass it sinks, holds its shape and stays there, so the last mouthful is the whole serving at once — which is how most people decide they do not like sea moss.

Shaking it with the lemon juice and a small amount of water does two things. The mechanical force breaks the gel apart, and the acid helps it loosen and disperse. Once it is evenly suspended in that small volume, topping it up with the rest of the water keeps it suspended.

If you do not have a jar with a lid, a whisk in a small bowl gets you most of the way there. A spoon in a tall glass does not.

For a pink version, use the Purple Hibiscus jar. If you would rather start from dried moss, make the gel yourself.

Questions

Before you shake

Why is my sea moss sitting at the bottom of the glass?

Because it went into the full glass instead of being shaken with the lemon juice and a little water first. Tip it back into a jar, add the acid, shake for fifteen seconds and start again.

Can I use bottled lemon juice?

Yes. Squeezed lemon tastes better, but bottled juice does the same job of helping the gel disperse.

How long does the pitcher keep?

Keep the concentrate in the fridge and use it up while it is good. Once you have mixed gel with juice and water you are on the clock of the shortest-lived thing in the jar, so make a batch you will actually finish.

Can I make it with hot water, like tea?

Hot water thins the gel out and you lose the body entirely. Warm water for the concentrate is fine and actually helps; boiling water defeats the purpose.

Does the lime juice in the jar make it sour already?

Only faintly. The jar lists lime juice as an ingredient and you can taste it straight from the spoon, but in a glass of lemonade it reads as part of the citrus rather than as a separate thing.
